Preparation
- In a bowl, collect the grated coconut together with the agave syrup. Flavor with vanilla essence and mix everything with the coconut cream (butter) left to cool in the fridge.
The coconut cream
To prepare this recipe we used the fat part of coconut milk: we recommend buying canned coconut milk (35% fat), and taking the creamy and dense part (rich in fat), essential for mixing and binding the composed.- The dough must appear rather compact but not crumbly. Put the mixture in the fridge for 20 minutes or in the freezer for about ten minutes: in this way, the dough will be more easily workable.
- After the necessary time, take a spoonful of mixture, squeeze it in your hands to create an oval shape, reminiscent of that of the classic Bounty. Each coconut candy should weigh 15-16g: we recommend weighing each serving, in order to achieve regular bounties.
- Arrange the sweets in a tray lined with baking paper or with cling film, then leave to set in the fridge or freezer.
- Dedicate yourself to the preparation of the couverture chocolate. Chop the dark chocolate and collect it in a bowl. Add two tablespoons of coconut oil (or seed oil), and melt it gently in the microwave or in a double boiler.
Did you know that
If you melt the chocolate without exceeding 42 ° C, you will get perfect bounties also for raw food.
You can also avoid the use of coconut oil (it serves to make it easier to cover the sweets): in this case, tempering the chocolate is essential for an excellent result.- Using a fork, dip the sweets in the melted chocolate and gently drain the excess chocolate.
- Allow the bounties to dry on a sheet of parchment paper. Refrigerate for at least one hour to allow the chocolate to solidify.
- Serve.
- The bounties can be kept in the fridge for 2-3 weeks, in a tray with an airtight lid.
