E526 CALCIUM HYDROXIDE
Calcium hydroxide, otherwise known as slaked lime [Ca (OH) 2], is a compound with a synthetic acidity regulator function. In particular, it is a strong alkalizing agent. Slightly soluble in water. Insoluble in ethanol. Soluble in glycerol.
It is used in small quantities in various products, such as in baby milk, wine, beers, liqueurs, ice cream, canned peas and grape juice. A calcium hydroxide solution can be used to keep eggs longer. A solution of calcium hydroxide and sugar (1: 3) is used to regulate the acidity in frozen foods. It is also used to strengthen the structure of plants during processing.
It is also used by industry in the manufacture of plaster, cement and other building materials.
There are currently no known negative side effects on human health.
