Dodecyl gallate is broken down in the intestine to lauryl alcohol and gallic acid. Gallic acid can cause eczema, stomach problems and hyperacidity.
ADI DOSE: 0.05 mg per kg of body weight.
These last three molecules (propyl gallate, octyl gallate and dodecyl gallate) resemble tannins, but their acceptability is still much discussed.
These food additives can be contained in oils and fats for frying (no olive pomace oil), in ready-made sauces and ragout, chewing gum, margarine, etc.
