The esters of mono and diglycerides of fatty acids are food additives obtained from glycerol, natural fatty acids and other organic acids (acetic, lactic, tartaric, citric).
Fatty acids are especially of plant origin, but animal fats could also be used.
The compounds obtained are a set of several products and have a composition similar to natural fat partially digested and esterified with other natural fats.
The mono and diglycerides of fatty acids are used in the various products especially with an emulsifying and stabilizing function. In particular, they can be contained in oils and fats, in some types of bread and biscuits, rusks, baked goods, mashed potatoes, jams, cereal porridges for babies, panettone and doves.
In biscuits, rusks, panettone and colombe, the mono and diglycerides of fatty acids are used in particular to maintain the fragrance and softness of these products.
At the moment there are no known negative side effects for humans as the body metabolizes all the components just like normal acids and natural food-based fats.
ADI dose: 50 mg per kg of body weight.
