E524 SODIUM HYDROXIDE
Sodium hydroxide, otherwise known as caustic soda (NaOH), is a compound with the function of acidity regulator (it is a strong alkalizing agent) and synthetic technological adjuvant. It is used to enhance the industrial peeling of fruits, to blacken olives and in preparation of caramel.
It comes in the form of lumps, flakes, sticks, fused masses or other forms, white or almost white in color. The solutions are clear or slightly cloudy, colorless or slightly colored, very caustic and hygroscopic and, when exposed to air, absorb carbon dioxide, forming sodium carbonate. Very soluble in water. Easily soluble in ethanol.
Sodium hydroxide is an additive used primarily in foods intended for infants and young children, margarines, chocolate snacks, ice creams, cocoa powder, certain flours, baked desserts and jellies.
It is often considered a harmless compound, but even here the research is contradictory, so it is best not to consume large quantities.
