The right idea
Generally the leaves and the upper parts of the fennel are thrown away because they are stringy. In this case, however, nothing is thrown away: we also learn to use the “waste” of fennel, which is also very tasty and rich in mineral salts and precious vitamins.- Arrange the pieces of fennel and potatoes in a pan and cover flush with the water. Season with salt and add a teaspoon of fennel seeds: gently boil the vegetables for 20-30 minutes, until soft. Remember that the larger the potato and fennel pieces, the longer the vegetables will have to cook.
- Blend the vegetables with the immersion blender and add about half a glass of milk. Enrich the cream with the grated parmesan. Those who want a more liquid velvety, can add more water or milk.
- Lightly toast the almond flakes in a pan.
- Serve the purifying cream, decorating with a few slices of toasted almonds and fennel seeds.
