Preparation
Preparing the cocoa glaze to decorate is very simple but it is necessary to prepare it in time, at least a couple of hours before starting the decoration of the cake, to give the glaze the necessary time to reach the right consistency.
- In a saucepan, dissolve the sifted bitter cocoa in water: it will result in a rather dense paste.
- Put the saucepan on the stove and add the sugar: the cocoa mass and water will dissolve immediately.
- Bring the mixture to a temperature of 106 ° C, continuing to mix. If you do not have a food thermometer, wait for it to boil and wait for it to start forming evident bubbles (as if the chocolate were about to come out of the saucepan).
- At this point, remove the saucepan from the heat and let it cool, preferably at room temperature, until the desired consistency is obtained.
- Stir frequently during the cooling phase to prevent an unsightly film from forming on the surface.
