Chicken is a delicious white meat that lends itself to a thousand and one recipes! Today we will make a light and at the same time tasty dish, which in my house has become almost a regular: I'm talking about chicken nuggets with vegetables. And to give an elegant touch to this dish, we will also use a drop of balsamic vinegar glaze.

Ingrediants
- 400 g of chicken breast
- 300 g of carrots
- 300 g of zucchini
- 50 g of white flour of type 00
- 2-3 tablespoons of extra virgin olive oil
- 1 pinch of salt
- q.s. of pepper
- 1 sprinkle of balsamic vinegar glaze

Preparation
- First, peel the vegetables: peel the carrots, remove the ends from the zucchini and wash them in cold water. Finely grate carrots and courgettes to obtain a vegetable julienne.
- Sauté the vegetables in julienne strips in a pan with a drizzle of oil, salt and pepper: cook for about ten minutes.
- Cut the chicken breast into cubes. Salt and pepper to taste. Quickly roll the chicken nuggets in flour.
The right idea
Those suffering from celiac disease can replace white flour with corn starch or rice starch: the result will still be excellent.- Heat a drizzle of oil in a pan and brown the chicken nuggets on all sides. In the meantime, the vegetables will have softened and browned: then add the vegetable mix to the browned chicken and cook for another 5 minutes.
- Serve the steaming chicken nuggets, finishing with a drop of balsamic vinegar glaze.
