Ingrediants
- 125 g of white flour of type 00
- 120 g (2 medium) of eggs
- 300 ml of milk
- half a teaspoon of salt
- 20 g of butter
Materials Needed
- Electric hand mixer
- Bowls
- Small ladle for crepes
- Non-stick scoop
- Stone or non-stick pan
- Plate
- Transparent film for storage
Preparation
- Pour the eggs and milk into the container of the electric mixer: work everything until the mixture is fluid but homogeneous.
- Then add the salt, flour and melted butter: continue to work everything with the electric whisk for a few minutes. The batter is ready when the consistency is velvety and there is no trace of flour lumps.
- Heat a stone pan: when it is very hot, pour a ladle of batter and cook it on both sides for a few minutes, maintaining a rather lively flame. Proceed in this way with all the crepes.

If you are using stone pans you will not need to add oil or butter to the pan before pouring the pancake batter, as this type of material prevents food from sticking to the bottom. If, on the other hand, steel or non-stick pans are used, it is advisable to add a hint of butter or a drop of oil before preparing each pancake.- Once all the crepes have been prepared, they can be filled with whatever the imagination dictates. If not used immediately, the crepes can be stored in the refrigerator on a plate, well covered with cling film, for a few days.
