Preparation
- In a bowl, combine the butter at room temperature with the sugar and work the cream mixture with a hand whisk or electric whisk.
- At this point, add one egg at a time and work the cream. Then add the yogurt, salt and flour. As a last ingredient add the sifted yeast. Mix everything until the mixture is smooth and soft.

The original recipe of the Madeira cake involves using much higher doses of butter and sugar, compared to those proposed in this recipe (about 240 g of sugar and 240 g of butter!). To make the dessert lighter, we recommend using yogurt (instead of just butter) and reducing the sugar dose.- Line an 18 cm diameter springform pan with baking paper.
- Divide the mixture into five bowls. Combine the bitter cocoa and milk in the first one, and the different dyes in the remaining four bowls: in this way you will obtain chocolate, blue, yellow, green and red colored doughs. Starting from the center of the pan, arrange a spoonful of each colored dough, taking care to follow a certain order in arranging the colors.

To obtain a better effect, it is advisable to prefer tall and narrow pans: in this way, the cake will develop in height and the variegated effect will be more scenographic.
In this recipe we do not suggest the use of flavorings because we have chosen a fruity yogurt: in any case, those who wish can add vanilla flavor or half a glass of liqueur to taste.- Preheat the oven to 160 ° C (ventilated) and bake for 40-45 minutes or until the inside is perfectly dry: the toothpick test is recommended to ensure the cake is properly cooked.
