Preparation
- In a bowl, collect the dry ingredients: white flour, wheat starch, bitter cocoa, baking powder, salt and powdered sugar. Mix the dry ingredients with the butter at room temperature to form a sandy mixture.

Yeast for cakes is an ingredient not always present in the shortcrust pastry recipe: in this version we recommend it to obtain a softer dough.- At this point, combine the two egg yolks and the milk: knead until a soft and compact dough is obtained.
- Wrap the dough in a sheet of cling film and let it rest for at least half an hour in the fridge: in this way, rolling out the dough will be easier.
- The shortcrust pastry is ready to be rolled out to prepare pies or shortbread biscuits. With these ingredients, you can prepare a tart with a diameter of 22 or 24 cm.
- It can be kept in the fridge for 3 days or in the freezer for 3 months.
