Today I will show you a delicious recipe to serve the sweet Easter dove in a different way than usual, elegant and refined. And the same recipe you can use when you have left a piece of dove! We will prepare a cheesecake by the glass: first we will crumble the cake on the base of the glasses, then we will cover it with a cheese and strawberry mousse.

Ingrediants
For 6 glasses
- 100 g of Easter dove
- Untreated lemon juice
- 100 g of powdered sugar
- 250 g of strawberries
- 2 g of isinglass
- 200 g of fresh cream
- 100 g of fresh ricotta
- 100 g of spreadable cheese
- 1 glass of marsala
- To decorate (optional): 40 g of chocolate eggs
Materials Needed

- 6 glasses or ring with a diameter of 22 cm
- Bowls of various sizes
- Chopping board
- Knife
- Sieve

In this recipe we suggest the use of the ready-made colomba. In any case, the dessert can be replicated using leftover sweets or dry biscuits.- Crumble the dove and place it on the base of glasses or bowls.
- Lightly wet the dove base with Marsala liqueur or other liqueurs to taste.
- Soak the gelatine in cold water for 10 minutes.
- Prepare the filling cream. With the electric whisk, whip 180 ml of cream and set aside. Mix the fresh ricotta with the spreadable cheese and 50 g of powdered sugar. Gradually add the whipped cream.
- Heat the remaining cream (20 ml) and dissolve the isinglass squeezed out of the soaking water.
- Combine the cream with the cream jelly, mixing quickly.
- Distribute the cream thus obtained in the glasses, up to ¾ of the height. For a better presentation, it is advisable to use a pastry bag.
- Place the glasses in the fridge for at least two hours to facilitate the consolidation of the cream.
- Meanwhile, clean and wash the strawberries, then dry them gently and cut them into slices. Mix the strawberries with 50 g of powdered sugar and the juice of half a lemon, then leave them to macerate until the cream is consolidated.
- Remove the glasses from the fridge and decorate with a spoonful of strawberries soaked in sugar and lemon.
- Decorate with a few chocolate eggs and, to taste, with icing sugar.
