- 1 tablespoon of pickled green pepper
- 1 sprig of rosemary
- A few sage leaves
- Untreated lemon juice and zest
- 1 pinch of salt

- Spacious bowls of various sizes

Preparation
- Preparation of the spicy marinade. In a bowl, emulsify the balsamic vinegar with the white wine and the extra virgin olive oil. Enrich the emulsion with spicy paprika, black pepper, brown sugar and garlic (whole or crushed, according to your taste).
Some alternatives
As an alternative to balsamic vinegar, soy sauce can be used; brown sugar can be omitted and chilli powder can be substituted for fresh chilli. The mix can be enriched with chopped shallots.- Preparation of the lemon marinade. Grate the zest of one lemon, being careful not to remove the white (bitter) part. Cut the lemon in half and extract the juice. Emulsify the lemon juice with the oil and flavor with rosemary, sage, green pepper and garlic (whole or pureed).
- Dip half a chicken in the spicy sauce and the other half in the lemon marinade. Cover the bowls with cling film and leave to cure for at least 2 hours, preferably overnight!
- At this point, cook the chicken on the electric grill (as in our case), or in the oven or pan.
