Preparation
- Chop the dark chocolate with a long-bladed knife.
- Melt the chocolate in the microwave or in a double boiler. Allow to cool.
- In the meantime, pour the acquafaba (chickpea cooking water) into a container, insert the electric whisk and work the mass until stiff peaks.
What is aquafaba?
Acquafaba is the cooking liquid for chickpeas. For best results, it is advisable to concentrate the cooking broth by letting the water evaporate for 2-3 minutes over a high flame.
To speed up the time, you can use the liquid found in canned chickpeas: in this case, however, it is advisable to prefer organic products with few preservatives. Unlike home-cooked legumes, the liquid from canned chickpeas contains a certain amount of salt, but the amount will still be reduced and will not negatively affect the final result.
The water of the chickpeas, subjected to mechanical processing with whips, has rising capacities due to the presence of some particular substances, called saponins: in contact with water, the saponins develop a stable and persistent foam.
To taste, you can add a tablespoon of lemon juice to the mass: being rich in vitamin C, lemon juice favors the formation of foam, stabilizing the mixture.- When the mass is whipped, add it in spoonfuls to the now lukewarm melted chocolate, taking care to gently work the mousse from top to bottom.
- Transfer the mixture to the fridge for a couple of hours.
- Collect the mousse in a piping bag and portion into bowls. To taste, serve with red fruits or with chopped hazelnuts.
- The chocolate mousse can be kept for 3 days in the fridge.
