- 100 g of sultanas

Preparation
- First, devote yourself to the preparation of the cheesecake base. Gather the biscuits in a plastic bag, then crumble them with the help of a rolling pin. Pour the milk into the biscuit powder and knead until the mixture is rather moist. Distribute the biscuit crumbs on the base of a springform pan, carefully lined with baking paper: level the base with the help of the edge of a spoon.The doses of milk depend on the type of biscuits used.
- Soften the raisins in warm water for 5 minutes, then rinse, squeeze and set aside.
- Dedicate yourself to the preparation of cream cheese. Shell the eggs and divide the yolks from the whites. Collect the egg yolks in a container, add the brown sugar, a pinch of salt and cream for 5 minutes. At this point, slowly add the quark cheese by spoonfuls. It is advisable to use the cheese at room temperature to avoid the formation of lumps. Flavor with the lemon zest and vanilla essence, then add the softened raisins: continue to work the mixture until you get a smooth and velvety consistency.

To prepare this recipe we used homemade quark cheese. The preparation is simple: just mix 2 liters of milk with a jar of yogurt and lemon juice, bring to 90 ° C and transfer the curd onto a cloth to let the whey drain. Your homemade quark cheese is ready.
- Preheat the oven to 160 ° C.
- Beat the egg whites until stiff. Add the mass of egg whites to the cream cheese, a little at a time, taking care not to let the mixture collapse.
- Spread the cream on the base of the cake. Place in the oven and bake at 170 ° (ventilated) for 40 minutes. Turn off the oven and let the cake rest inside.
- The Quark cheesecake is ready: if you like, you can serve it with strawberry jam. It can be kept in the fridge for 3-4 days.
