Ingrediants
- 160 g of wholemeal spaghetti or wholemeal pasta
- 80 g of vegetable cream
- 50 g of walnut kernels
- grated rind of untreated lemon
- q.s. of salt
- q.s. of pepper
- 1 sprig of parsley
Materials Needed
- Casserole with lid for cooking pasta
- Sauce pan
- Fork
- Food cutting board
- Preferably ceramic knife for parsley

Preparation
- Bring the water to a boil in a large saucepan. Season with salt. At the moment of boiling, add the wholemeal spaghetti and cook for 10 minutes (check the optimal cooking time on the package).
- Meanwhile, prepare the accompanying sauce. Crush the walnuts with the special tool and chop the kernels coarsely.
- Heat the vegetable cream over a very low heat: grate the zest of half an organic lemon and continue stirring. If you like, add a few drops of lemon juice to obtain a sauce with a stronger flavor.
Make vegetable cream with your own hands
Pour 1 part of soy milk (preferably self-produced and unsweetened) and 2 parts of corn oil into a beaker. Mix everything until you get the desired consistency.- Drain the pasta al dente and finish cooking in the cream and lemon sauce. If necessary, add a ladle of pasta cooking water: the sauce must not be too dry.
- Chop the parsley and add it to the pasta. Serve the steaming pasta with the pepper and chopped walnuts.

Wholemeal Spaghetti with Cream, Lemon and Walnuts are a first course without ingredients of animal origin, therefore cholesterol; saturated fats are also moderate.
