If you like meat skewers but you don't want to fall on the banal, I propose a very, very particular alternative. By now you know me: I love the contrasts between sweet and savory. meat and fruit (apricots in particular) But that's not all: as an accompanying sauce we will make an avocado cream which - in my opinion - goes divinely with the cuts of meat I have selected.

Ingrediants
For 4 skewers
- 80 g (4 pieces) of pork loin
- 80 g (4 pieces) of turkey
- 80 g (4 pieces) of veal nut
- 80 g (1 medium) of poached chicken
- 180 g (2 large) of apricots
- q.s. of salt
- q.s. of pepper
For the Guasacaca sauce
- 150 g (half) of avocado
- 2 tablespoons of vinegar
- 1 stick of celery
- 80 g of coppery tomatoes
- 100 g of peppers
- 1 tablespoon of extra virgin olive oil
For the macera
- half a cup of untreated lemon juice
- 50 ml of dry white wine
- 1 teaspoon of flavorings for roasts
- 1 sprig of rosemary
Materials Needed
- 4 sprigs of rosemary
- Bowls of various sizes
- Pan with lid

Preparation
- Cut the pork loin, turkey and chicken breast into fairly regular squares. Divide a chicken sausage into 4 pieces.
- Prepare the marinating liquid by pouring the dry white wine, lemon juice, rosemary sprig and roast spices into a large bowl.
- Soak the meat for 30 minutes.
- Meanwhile, prepare the accompanying sauce. Cut the avocado lengthwise and remove the central stone. Peel half of it and cut it into small pieces. Also clean the celery, pepper and tomato, then cut all the vegetables into small pieces.
- Pour the celery, the avocado, the vinegar, the tomato, the pepper and the oil into the immersion blender, season with salt and pepper, and blend everything until you get a sauce.

The proposed sauce is a reinterpretation of the Guasacaca sauce from Venezuela, ideal to accompany grilled and grilled meats. In addition to the ingredients described above, the original recipe for guasacaca sauce also includes the addition of garlic and onion.- Cut 2 large apricots into 8 pieces. Remove some rosemary leaves from the 4 twigs, leaving a tuft at the end: the leafless twigs will act as a toothpick for the meat.
- After 30 minutes, remove the meat from the marinating liquid.
- Skewer the cubes of chicken, turkey, veal and the pieces of sausage with the sprigs of rosemary, alternating each piece of meat with an eighth of apricot. Proceed like this until all the ingredients are used up.
- Season the skewers with salt and pepper.
The right idea
To better pierce the meat with the rosemary sprigs, it is advisable to pierce each piece with a pointed toothpick stick.- Heat a pan on the stove: when it is very hot, brown the 4 skewers without adding oil, butter or other condiments.
- Cook the meat on all sides over high heat, deglaze with the maceration liquid and lower the heat to cook the meat also in the center. It will take about 10-15 minutes.
- Serve the meat skewers with the avocado and celery sauce.
