Don't worry, when properly treated, nettles are harmless and lose their stinging power. Today I will give you a demonstration by making special savory muffins with nettles!

For 6 muffins
- 200 g of fresh spinach or nettles
- 100 g of wholemeal flour
- 40 ml of corn oil
- 150-170 ml of water
- 2 g of guar gum
- 2 g of cream of tartar
- 1 g of baking soda
- 1 pinch of garlic powder
- Q.b. of salt

Preparation
- Clean the nettles. Wearing resistant latex gloves, rinse the nettles in cold water and immerse them in a basin full of water and baking soda, essential to eliminate impurities. Rinse again.

The leaves of the nettles are covered with hollow stinging hairs (called trichomes) which, in contact with the skin, act like needles because they release some itchy molecules (eg histamine). Soaking is usually sufficient to eliminate stinging hairs, and boiling water completely eliminates stinging substances.- Blanch the nettles in plenty of boiling water for a couple of minutes.
- Drain the nettles with the help of a slotted spoon and collect them in a beaker. Add the cold water, a pinch of salt, the garlic powder, the oil and blend to obtain a cream.
- In a bowl, sift the wholemeal flour, add the guar gum, cream of tartar and baking soda (basic ingredients of homemade chemical yeast) and, in the center, pour the mixture of water, oil and nettles.

- Distribute the mixture in the muffin cups, filling the molds up to 3/4 full.
- Bake the muffins in the oven at 160 ° C (mode: ventilated) for 20-25 minutes or until golden brown.
- Remove from the oven and serve to taste. Those who wish can cut the muffins in half and fill them as they like.
