Preparation
Grandma's tart without butter is the light variant of the classic cake prepared with shortcrust pastry and stuffed with custard and pine nuts. The peculiarity of the dessert is the absence of butter in the shortcrust pastry, and the replacement of this ingredient with a little oil. The lightness of the tart is also favored by the net caloric reduction of the light custard, prepared with vegetable milk, only 2 egg yolks, fructose and guar gum.
- Preparing the shortcrust pastry without butter is very simple and fast: in a large bowl pour the white flour, fructose, salt, sifted baking powder and mix well.
- Combine the whole egg, the yolk, the rum, the milk and the oil: mix all the ingredients, first with a wooden ladle, then with your hands, until you get a smooth and soft dough.
- Leave the pastry to rest for at least three hours in the refrigerator, to give the cake a better crispness.
- Now prepare the light custard (it is advisable to refer to the video dedicated to the preparation).
How do you prepare the light custard?
Heat 300 ml of soy milk in a saucepan. In the meantime, beat 2 egg yolks with 40 g of fructose and lemon flavoring for a long time with electric whisk; dissolve 20 g of potato starch in 200 ml of cold soy milk, and add everything to the beaten eggs. point, pour the mixture of egg yolks, milk, flour and fructose into the hot milk, stirring vigorously with the whisk. After a few moments, pour in 4 g of guar gum, a powerful thickener, and continue to mix over moderate heat until the right consistency.- Roll out the shortcrust pastry without butter with a rolling pin, until it reaches a thickness of 6-7 mm. Line a cake pan with a diameter of 26 cm with baking paper, then cover with the shortcrust pastry leaving a thick border, which can contain the cream.
- Pour the light custard over the pastry until it covers the entire surface of the cake. Finish with a few pine nuts and put the cake in a hot oven at 180 ° C for 35 minutes.
- Allow to cool and serve, decorating as desired.
