- 20 g (4 medium) of green olives
- About 25 g of black or red lumpfish roe
- About 25 g of egg-free tuna sauce
- About 25 g of pate of black olives

Preparation
- With a heart-shaped mold, cut the loaf or sandwich bread to obtain 24 shapes. With another smaller pastry cutter, engrave 12 large hearts to obtain as many rings: for these canapés, you will therefore have to obtain 12 large hearts (base) and 12 heart-shaped rings (covering the bases).
- PREPARATION OF SALMON TARTINE - Spread the cheese (eg robiola, ricotta, stracchino or any spreadable cheese) on the basis of 4 large hearts and on 4 rings. Coat the bases with 4 slices of smoked salmon. Cover the tart with the ring, taking care to place it on the side covered with cheese. Distribute the lumpfish roe along the entire edge and arrange a caper in the center.
- PREPARATION OF TARTINE WITH LUMP EGGS - Spread the olive paté on the base of 4 bread hearts and the tuna sauce on 4 rings. Place each ring (from the stuffed side) on a base. Stuff the heart with red lumpfish eggs and arrange 4 olives in the center.
- PREPARATION OF TARTINE WITH QUAIL EGGS - Spread the tuna sauce on the base of 4 hearts and on the rings. Shell 4 quail eggs, taking care not to break them. Place the heart-shaped mold on a hot pan, possibly greased with oil. Pour a quail egg inside, pressing the mold onto the pan to give it a heart shape. After a few moments, the “bull's eye” omelette is ready. Set aside and repeat cooking with three more eggs. Arrange the heart-shaped omelettes on the bread base and close with the ring (on the stuffed side). Decorate the top of the ring with lumpfish roe.
