Today we will prepare a crumb cake typical of northern Italy, called Sbrisolona or Fregolota. These names may be bizarre, but they originate in the local dialect: in Mantua, "briciola" is called "brisa", while in Veneto it is called "fregola". Hence the name of the dessert! The main ingredients are white flour, yellow flour, sugar and almonds. To reduce the calories a little, I changed some doses compared to the traditional recipe!

For pasta
- 100 g of white flour of type 00
- 100 g of yellow corn flour
- 100 g of almonds
- 60 g (1 medium) of eggs
- 50 g of butter
- 100 g of brown sugar
- 1 pinch of salt
- Grated rind of untreated lemon

- 1 splash of grappa

Preparation
- Combine about 80 g of almonds in the container of a blender. Blend until you get a powder.
- In a bowl, sift the white flour and combine the corn flour (it is advisable to prefer a type of fine-grained corn flour) with the almond flour, 80 g of brown sugar and salt. Flavor with grated lemon zest.

In this recipe we have slightly modified the original doses, reducing the amount of butter to 50 g (instead of 100) and using a whole egg instead of just the yolk.
It is possible to revisit the sbrisolona in a vegan way: in this case, it is advisable to replace the butter with homemade margarine and the egg with soy milk.- Add the butter at room temperature and mix it with the flours with your hands until you get a crumbly and sandy mixture.
- Mix everything with an egg (egg white and yolk): you will have to obtain a mixture of moist and coarse crumbs.
- Preheat the oven to 180 ° C.
- Line a hinged pan with a diameter of 24 cm with baking paper, then pour the mixture of crumbs, flattening it slightly by exerting gentle pressure with your hands: the surface should not be uniform. Finish by inserting the remaining whole almonds and sprinkling with brown sugar.
- Bake at 180 ° C (ventilated) for 20-25 minutes.
- Remove from the oven, allow to cool and arrange on a concave plate. Sprinkle a little grappa on the surface of the cake and, with a fist, break the sbrisolona into pieces. Serve the cake in irregular pieces.

The Sbrisolona is a food included in the group of desserts.
It has a high calorie intake, mainly provided by carbohydrates, followed by lipids and finally by proteins.
Carbohydrates are mainly complex (starch), unsaturated fatty acids and proteins of medium and high biological value.
Fibers are abundant and cholesterol is present in medium entity.
The Sbrisolona does not lend itself to the vegan diet, while it is allowed in the ovo-vegetarian diet.
