For 14 puff pastries:
- 400 g of puff pastry
- Grated rind of untreated lemon
- 1 pinch of cinnamon
- About 40 g of sugar

To prepare the fans we used homemade puff pastry. To speed up the time, you can buy ready-made puff pastry.- Prepare the puff pastry as shown on THIS VIDEO.
- Gently roll out the puff pastry with a rolling pin, obtaining a long rectangle, with dimensions of 15 X 30 cm and a thickness of 5 mm.
- Sprinkle the entire surface with sugar, flavor with grated lemon zest and a pinch of cinnamon.
- Wrap one short side of the rectangle on itself, until it reaches the middle of it: in this way, a roll is obtained.
- Carry out the same operation on the other side, so that the two rolls come into contact.
- Close the dough on a sheet of baking paper and let it rest in the freezer for 15 minutes: in this way, it will be easier to cut the roll into slices.
- Remove the pastry from the freezer, then slice the roll into strips of 1 cm, to form fans.
- Arrange the puff pastry fans on a plate lined with parchment paper and bake in a hot oven, preheated to 200 ° C, for about 20 minutes, taking care to turn the sheets halfway through cooking for even browning.
- Allow to cool and serve to taste.
