The sorcerer grins and recites a refrain:

After the magic refrain, the witch is pervaded by a very special sensation, and she is hungry: she wants the very food she absolutely hates, the onion. So she decides to cook onions!

- 20 g of sugar
- 150 ml of water

- 50 ml of balsamic vinegar

Normally, the traditional recipes of sweet and sour onions involve the use of butter, which must be left to brown together with the sugar.
To avoid using butter, we offer the much lighter version, with a drop of oil: in this way, we will also avoid the initial browning of the onions.- Combine the clean onions in a pan. Add a couple of tablespoons of oil, sugar, salt and pepper. Cover with water and bring to a boil.
- Mix thoroughly and close with the lid. Continue cooking for 50-60 minutes, over a very low flame, avoiding to lose the boil.
- From time to time, mix the onions taking care not to break them.
Attention!
It is recommended to check the cooking of the onions often: if the liquid dries excessively, add more hot water.- At the end of cooking, raise the heat to brown the onions and let the sauce that has formed caramelize. Deglaze with some balsamic vinegar and cook for another 5 minutes.
