When we say "discover something by chance ..."! Well, today I would like to offer you a recipe that has left me pleasantly shocked, and which I must say has aroused a lot of interest on my Facebook page: I'm talking about the puffed wraps with giant bubbles. The secret? A pinch of yeast, a few hours of leavening and the hot pan!

Ingrediants
For 4 wraps
- 300 g of white flour of type 00
- 30 ml of extra virgin olive oil
- 4 g of salt
- 0.2-0.5 g of brewer's yeast
- About 150 ml of water
Materials Needed
- Bowl
- Sieve
- Rolling pin
- Stone plate
- Transparent film
Preparation
- Crumble the brewer's yeast in warm water, adding a teaspoon of sugar.
- Sift the white flour and, in the center, combine the water with the yeast. Mix the ingredients by adding the oil and, finally, the salt: work the dough by hand to obtain a smooth and soft dough.

To weigh such a small amount of yeast, calculate 1 gram and divide it in half: for this dose, it is enough to use a minimum dose of brewer's yeast.
You can also use mother yeast, adjusting the amount of liquid accordingly.
- Place the dough in the bowl, cover with cling film and leave to rise for 2 hours.
- Divide the dough into 4 pieces and cut into balls. Crush the balls with your hands and flatten them with a rolling pin to obtain a diameter of at least 20 cm.
- Place the wraps on some sheets of baking paper and leave to rise for about an hour.
- At this point, proceed with cooking. Heat a plate until it becomes red-hot; with parchment paper, lift the flatbread and turn it over onto the baking tray, removing the parchment paper. Cover with the lid maintaining a very high heat: after a few moments, you can notice that the piadina begins to swell a lot. Turn it over quickly, with the help of the spatula and finish cooking.
- Remove the wraps from the plate and serve very hot accompanying with vegetables, sauces, meats or cheeses.

It is a fairly caloric food, whose energy is mainly supplied by carbohydrates, followed by lipids and finally by proteins.
