ESTERS OF SORBITAN
This group of food additives is able to guarantee, for a long time, the stability of an emulsion (in fact they are also used in the world of cosmetics and pharmaceutical ointments).
In the food sector, sorbitan esters can be used in baked goods, fillings, desserts, ice creams, cream substitutes, pastry toppings, etc.
E491 SORBIT MONOSTEARATE
Sorbitan monostearate is a food additive made from sorbitol and stearic acid.
It mainly has an emulsifying and stabilizing function.
It can be contained in different products (see above).
It does not appear to have any negative side effects to human health.
ADI dose: 26 mg per kg of body weight.
