Xanthan gum is a natural polysaccharide derived from the fermentation of carbon hydrates (sugars) with the culture of the bacterium Xanthomonas campestris.
Xanthan gum is a compound with a thickening, stabilizing, gelling and support function for synthetic additives.
It can be contained in different products, such as sauces, pastry creams, baked confectionery products, puddings, chewing gum, sugared almonds, candies, dried fruit, pretzels, liquid for desserts, condiments for seafood, packaged salads.
At the doses normally used, there are no known negative side effects; however, it has been found that the long use of xanthan gum in high doses can cause flatulence and swelling in all subjects, and in the most sensitive ones also asthma crises, skin reactions and respiratory allergies.
