E261 POTASSIUM DIACETATE or POTASSIUM ACETATE
Potassium acetate is the potassium salt of acetic acid. It is an acidifying compound that can be of natural or chemical origin.
Acetates are used as preservatives and buffers.
They are contained in many products such as sauces or canned products.
Potassium acetate does not appear to have negative side effects, as it is a normal component of body cells.
It should only be avoided by those who have an "intolerance to" vinegar (however very rare).
Not recommended for consumption by people with kidney problems.
