Since rice salads cannot be missing on Italian tables during the summer months, I would like to offer you my "black and white" version today. Why did I christen this dish "black and white rice salad"? Simple! Because we will use two types of rice: the classic white, parboiled or basmati, and the Venere rice, which is a particular rather valuable brown rice, rich in mineral salts and fiber.
I decided to personalize this dish by combining different ingredients that, in my opinion, go well together: feta (Greek cheese), nuts and vegetables. Let's see what we need right away!

Ingrediants
- a few stalks of chives
- 80 g of feta
- 30 g of walnuts
- 2 tablespoons of extra virgin olive oil
- 200 g of peppers
- 200 g of cherry tomatoes
- 100 g of parboiled rice or basmati rice
- 100 g of Venere rice
- 1 pinch of salt

- Casseroles with lid for boiling rice
- Bowls

Preparation
- Cook the parboiled or basmati rice and the Venere rice in lightly salted boiling water for 12 and 40 minutes respectively (or respecting the cooking times recommended on the label).
The advice OK
It is advisable to cook the two types of rice in different casseroles, both because they have different cooking times, and to preserve the light color of the parboiled rice.- Wash the vegetables thoroughly. Remove the stalk from the pepper, cut the pulp in half and remove the filaments and seeds. Reduce the pepper into small pieces.
- Also cut the cherry tomatoes into slices or small pieces.
- Add the vegetables, season with salt, add a little oil and flavor with some chopped chives.
- Shell the walnuts with a nutcracker and coarsely chop the kernels with a sharp knife.
- Drain the two types of rice well and pour them into a bowl, add the flavored vegetables and nuts. Mix well. Finally, finish with pieces of feta (Greek cheese).
