The summer brings a great desire to bring to the table colorful, aromatic dishes and faithful allies of our health. This is why today I propose a first course that does not require cooking: raw fettuccine. Well yes: carrots will represent the main ingredient of the recipe, which we will use as a substitute for classic pasta.

Ingrediants
- 300 g of carrots
- 40 g of basil
- 10 g of hemp seeds
- Raw food: 4 tablespoons of extra virgin olive oil
- Q.b. of salt
- Q.b. of pepper
- Untreated lemon juice and zest
- 2-3 tablespoons of hemp seed milk
- 100 g of cherry tomatoes
Materials Needed
- Vegetable peeler
- Mixer
- Bowls of various sizes
- Wooden spoon
- Row lemons or grater
- Chopping board
Preparation
- Wash the carrots, peel them and remove the stalk.
- Obtain the raw fettuccine by simply peeling the carrots up to the heart. Combine the fettuccine in a bowl.
- Dedicate yourself to making the dressing. Wash the basil leaves and dry them thoroughly. Combine the basil in the blender, add the salt, pepper, whole hemp seeds, the zest of a lemon and a few tablespoons of its juice. Add the oil and a few tablespoons of hemp seed milk. Blend everything until you get a creamy mixture. If necessary, add a few more tablespoons of water (or hemp seed milk) until you get the desired consistency.
Alternatives ok
As an alternative to hemp seeds, you can use sesame seeds, sunflower seeds or dried fruit to taste (eg almonds, pine nuts, walnuts, etc.).
To add creaminess, we recommend adding the pulp of a small ripe avocado.- Wash the cherry tomatoes and cut them into very small cubes. Salt lightly.
- Season the carrot noodles with the basil sauce, finish with the cherry tomatoes and serve with lemon zest. To better savor its flavor and fully enjoy the vitamins, it is advisable to immediately consume the raw fettuccine.
