I'll come to your rescue and suggest the right recipe that's right for you. Today we will prepare together the cotechino in cage, an exquisite turkey roll stuffed with cotechino, with a relatively low calorie content. No I'm not crazy, I just want you to understand how the cooking method can have a considerable impact on the total calories, consequently on the lightness and digestibility of the dish.

Ingrediants
For the roll
- 1 glass (about 200 ml) of dry white wine
- 400 g of turkey steak
- a few leaves of sage
- q.s. of salt
- 1 sprig of rosemary
- q.s. of pepper
- Gluten free: 500 g of cotechino
- 100 g of carrots
- 1 bay leaf
- 1 clove of garlic
For the garnish
- 1 tablespoon of extra virgin olive oil
- q.s. of pepper
- q.s. of salt
- 450 g of carrots
Materials Needed
- Rigid plastic bottle
- Roll screen
- Latex gloves (optional)
- Tool for coring
- Scissors to cut the retina
- Steamer
- Casserole with lid for the roll
- Pan for cooking carrots
- Food cutting board
- Pointed stick (toothpick)
Preparation
- First, steam the cotechino for a couple of hours.
The advice OK
Before cooking the cotechino it is recommended to pierce the casing with a toothpick (or a skewer stick) to prevent it from bursting during cooking.- Meanwhile, prepare the carrot garnish. After having washed and peeled them, cut the carrots into slices (one aside, which will be used to fill the cotechino) and season them in a pan with a little oil, salt and pepper. Cook on a low flame for 15-20 minutes.
- Remove the hot cotechino from the steam pan. With a knife, cut the surface of the cotechino lengthwise and remove the casing. It is important to do this when the cotechino is still very hot.
- Dig the inside of the cotechino longitudinally with the levatorsoli or with another sharp tool: we should pierce the cotechino along its entire length.
- Gently push the carrot kept aside into the cotechino, preventing it from breaking.
- Wrap the cotechino on the turkey steak. Salt the outside to taste. It is not necessary to salt the roll inside because the cotechino is already tasty.
- At this point, we proceed with the shaping of the actual roll, pushing it into the appropriate retina as if to form a cage.
How to wrap the roll in the elastic net?
Even at home it is possible to prepare excellent meat rolls! In this case it is advisable to use a rigid plastic bottle. Insert the elastic net into the bottle still full of water. Only after inserting the net, empty the bottle. With a knife, cut the bottle about 1/3 of its length and remove the upper end: you will have to obtain a cylinder with only one opening. Insert the roll of meat into the bottle and slide the screen gently along the cylinder. , until the end of the cotechino is closed. To facilitate the operation, it is possible to overturn the cylinder and make the net stick to the roll of meat. We recommend that you refer to the video.- Now proceed with the final cooking: brown the roll in a very hot saucepan (without adding oil and butter!). When it is well browned, blend with the white wine and add the aromas: rosemary, sage, bay leaf and garlic.
- Cook over low heat for 30-40 minutes.
- Allow the roll to cool. With scissors, remove the net and cut the roll into 1 cm thick slices.
- Serve the roll stuffed with cotechino with carrots.

The Stuffed Turkey Roll with Cotechino is a dish with a side dish that is quite energetic and rich in lipids but not as much as you would expect! NB.
