Preparation
- Preheat the oven to 180 ° C
- Wash the prawns in cold water.
- Proceed with cleaning the prawns. Place the prawn on the cutting board, with the head facing us. Insert the scissors into the armor, then score the back. Insert a stick inside, in the cut created until it reaches the intestinal thread. Lift the intestine, pull it gently, first from the head side, then from the other side, taking care not to break it. At this point, cut the pulp of the prawn with the tip of a knife and follow the incision made with scissors until the pulp is opened in two perfect halves.
- Rub the pan with a clove of garlic, then place the prawns on it, with the pulp side facing up.
- Add a pinch of salt (preferably flavored) on the pulp, and season with pepper. Flavor with grated lemon zest and a splash of its juice.
- Sprinkle with breadcrumbs and finish with two tablespoons of extra virgin olive oil. and a sprinkle of brandy.
