Vegetable delights today !! I love to transform the classic dishes of Italian cuisine and adapt them to different food philosophies. Today is the turn of the fillet with green pepper: I would like to overturn the original recipe by changing the main ingredient, that is the meat. We will not harm the animals and we will prepare an exquisite vegetable fillet (based on wheat muscle) with pepper. green and we will flavor it with an equally vegetable sauce.

Ingrediants
- 80 ml of soy milk
- 200 g or 3 slices of wheat muscle
- 100 ml of corn oil
- 1 tablespoon of extra virgin olive oil
- 1 heaping tablespoon of pickled green pepper
- 1 pinch of salt
- 1 teaspoon of mustard

In this recipe we used homemade wheat muscle, prepared with wheat gluten, pea flour and flavorings. To discover the recipe click on THIS VIDEO. Those who don't have much time can instead buy ready-made wheat muscle steaks or seitan.- Cut the wheat muscle into 1.5 cm thick slices. To improve the appearance of the dish, obtain regular medallions of vegetable meat with the help of a pastry cutter or a cookie cutter.
- Pour a drizzle of extra virgin olive oil into a pan and brown the wheat muscle thoroughly, adding salt to taste.
- Crush the green peppercorns in a mortar or with a simple spoon and pour them into a saucepan together with 30 ml of soy milk and the mustard paste. In this way, it is possible to enhance the spicy aroma of the pepper. Cook for 5 minutes.
- Prepare the vegetable cream: pour 50 ml of soy milk into a beaker and add 100 ml of vegetable oil.
- Melt the vegetable cream obtained in the pepper flavored soy milk saucepan.
- Turn off the pan of the wheat muscle and pour the vegetable sauce. Cover with the lid and let the sauce dry.
- Serve the vegetable fillet with green pepper hot.
