Today we prepare a very famous typically spring side dish: Roman-style artichokes! The preparation is easy but not trivial, and, served on the plate with the stem upwards, they always make a good impression!

- 750 g (5 medium) of artichokes
- 50 g of breadcrumbs
- 1 clove of garlic
- 1 sprig of parsley
- 1 bunch of mint
- 40 ml of extra virgin olive oil
- q.s. of salt
- q.s. of pepper

Preparation
- Clean the artichokes: remove the outer leaves (bracts), and cut the hardest part of the stem. Then remove the thorns and the upper part of the artichoke. With a digger or with a sharp knife, remove the central beard (pappus) by gently opening the inner leaves and taking care not to break the artichoke. Plunge the artichokes - whole but hollowed out and with the stem - in the acidulated water to avoid oxidation.
The right advice
To clean the artichokes we recommend wearing latex gloves or rubbing your hands with lemon juice to avoid making them black.
The original recipe calls for the use of mammole artichokes, special Roman artichokes of important dimensions.- Wash the aromatic herbs in fresh water and dry them. With the knife, coarsely chop parsley, mint and garlic; mix the fragrant mince with the breadcrumbs, add salt, pepper and oil until the mixture is rather thick.
- Stuff the artichokes with the fragrant filling.
- Place the artichokes upside down, taking care to choose a saucepan with high enough edges.
- Add two tablespoons of oil and a glass of water: cover the saucepan with the lid and cook for 20-30 minutes or until the artichokes are soft.
- Roman-style artichokes can be served very hot but they are also special to be eaten cold!
