- 250 g of white flour of type 00
- 100 g of sugar
- 150 g of butter
- 1 vial of vanilla flavoring or half a glass of rum
- 5 g of baking powder
- 1 pinch of salt
- 20 g of bitter cocoa
- 20 ml of milk

Preparation
- In a bowl, combine the sifted flour, softened butter, sugar, a pinch of salt, rum and baking powder. Mix all the ingredients well to form a smooth and soft ball of dough.

If you wish, you can replace the rum with a vial of vanilla flavoring or with a vanillin.- Divide the dough into two equal parts and obtain two balls. Crumble the first dough ball in a bowl, add the sifted unsweetened cocoa powder and milk (important for keeping the dough soft). We will thus obtain 2 dough balls: one black (with cocoa) and one white (with rum or vanilla).
- At this point, roll out each ball of dough on sheets of baking paper and obtain 2 rectangles of dough with an approximate size of 20 x 40 cm.

To facilitate the spreading of the ribbon of dough, it is advisable to spread the dough between two sheets of parchment paper. It is recommended to use very little flour to avoid drying the dough too much.- Overlap the ribbons of dough so that they coincide perfectly. With the help of the baking paper underneath, gently wrap the dough on itself, until a tight and compact roll is obtained.
- Wrap the roll on cling film and let it rest in the refrigerator for 30 minutes: in this way, the ingredients are compacted and it will be easier to form the swivels.
- After the necessary time, unroll the cylinder of dough on a cutting board and, with a sharp knife, obtain many small wheels with a thickness of 1 cm. Arrange the slices on the parchment paper and bake at 180 ° C for 10-12 minutes.
Pay attention to cooking
The biscuits must not brown excessively: for this reason, it is essential to check their cooking often. If they are too golden, remove the cookies from the oven even after 8-10 minutes.- Allow the biscuits to cool on the plate and remove them later.
