To prepare the macaroons we have deliberately omitted the use of bitter almonds because they are rich in amygdalin, a natural compound which - when taken in excess - is potentially toxic.- First, blend the almonds very finely with the sugar until you get an impalpable powder.
Why blend almonds with sugar?
Sugar makes blending easier because it absorbs the oil naturally present in almonds.- Pour the almond and sugar powder into a bowl, dissolving any agglomerated parts with your hands.
- Mix the very fine powder with an egg white until the mixture is firm and easy to shape with your hands.
- Roll the dough obtained in the icing sugar.
- From the dough, get many small balls. Roll each praline in powdered sugar.
- Place each ball on a plate lined with parchment paper. Let the pralines rest on the baking tray for at least 8-12 hours: in this way the ingredients will thicken and the pralines will take on a harder consistency.
- After 12 hours, turn on the oven at 160 ° C and, when it has reached the right temperature, bake the plate with the macaroons. Cook for about 10 minutes. To obtain soft macaroons, the pralines must not brown excessively. Those who want a more crunchy amaretto, on the other hand, can continue cooking for another 10 minutes
- Remove the baking tray and allow to cool. The macaroons are ready to be served. They can be stored in a tin box for 2-3 weeks.
