The wonderful Dolomites always fascinate me! As you can imagine from my outfit [I'm dressed in a ski suit] I just got off a lovely ski slope and I need something warm. You know, in Trentino it is traditional to drink boiling mulled wine after caressing the mountain with skis: we respect the "dogmas" of Tradition and let's go and prepare an excellent Vin Brulè. But first let's get a fire extinguisher then I'll explain why

Ingrediants
- 500 ml of red wine
- 50 g of sugar
- 2 cinnamon sticks
- 2 pieces of cloves
- Untreated lemon zest
- Peel of untreated oranges
Materials Needed
- Casserole
- Wooden ladle
- Knife or vegetable peeler
- Glasses
- Lighter
Preparation
- Pour half a liter of full-bodied red wine into a saucepan with the sugar. Flavor the wine with cinnamon, cloves, orange peel and lemon peel (citrus fruits must not be chemically treated).

Wine can also be flavored with nutmeg and juniper berries!- Cook everything over a very low flame, stirring often until the sugar is completely dissolved.
- As soon as the wine starts to boil (you can notice the formation of the surface foam), flame with a lighter. It is recommended to be extremely careful during this phase and to maintain a very gentle heat. The flame is important for burning the alcohol contained in the wine.
- When the flame goes out, it means that the alcohol has completely evaporated.
- Filter the mulled wine from the aromas and serve hot.
