The coconut is an exotic fruit native to tropical Africa, but also very popular in Italy. You can enjoy the crunchy pulp of the coconut as an alternative snack or drink the water contained within it. But the pulp can also be grated, blended with hot water and filtered: in this way you will obtain a nutritious coconut milk. Today I would like to enhance both the milk and the coconut pulp by preparing an exquisite pudding: let's get to work!

Ingrediants
For the pudding
- 200 ml of coconut milk
- 100 g of vegetable cream
- 50 g of sugar
- 40 g of coconut flour
- 1 vial of vanilla flavoring or 1 sachet of vanillin
- 3 g of agar agar
For the accompanying sauce (optional)
- 80 g of dark chocolate
- 30 g of vegetable cream

- Silicone mold with a capacity of 300 g or single-portion molds for pudding

- Small saucepan to melt the chocolate

Preparation
- Pour the coconut milk into a small saucepan. Combine the vegetable cream and sugar.
Make homemade coconut milk
Mix 1 part of grated coconut pulp with 2 parts of hot water. Leave to macerate for 20 minutes. Strain through a clean tea towel. Coconut milk is ready.- Bring the mixture to a temperature of 80 ° C, then sprinkle the agar agar while continuing to mix with the whisk to avoid the formation of lumps.
Why 80 ° C?
Agar agar (polysaccharide extracted from red algae used as a thickener and gelling agent) dissolves much faster when poured into a hot liquid at 80 ° C.- Turn off the heat and add the coconut flour and vanilla flavoring.
- Transfer the mixture to a silicone pudding mold. Leave to cool for at least one hour.
- Melt the dark chocolate with the vegetable cream.
- Turn the mold upside down on a serving dish and serve with the chocolate sauce.

Furthermore, the presence of vegetable cream further reduces the percentage of saturated fats and raises that of polyunsaturated; these characteristics make Coconut and Vanilla Pudding with Chocolate Sauce a dessert more suitable for hypercholesterolemic nutrition than common puddings based on animal cream.
