In the kitchen there is always something to learn! In a very modern shop of organic and ethnic products, my attention was captured by the tapioca pearls! Tapioca is a starch extracted from Cassava, a particular tuber typical of Central America, which resembles with potato. Starch is often used as a thickener in soups and soups and is distinguished by its extraordinary digestibility. Tapioca pearls are obtained by passing the starch through a sieve under pressure. And today we will use tapioca pearls to prepare a vanilla pudding (tapioca pudding).

Ingrediants
For 4 servings
- 60 g of tapioca pearls
- 375 ml of soy milk
- 50 g of brown sugar
- 1 vanilla pod
- 1 teaspoon of cinnamon powder
- 1 pinch of salt
- To serve: 200 g of papaya
Materials Needed
- Bowls
- Pudding cups or molds
- Casserole
- Scale weighs food
- Spoon or whisk
- Colander
Preparation
- Soak the tapioca pearls in cold water for at least 30 minutes.
- Rinse the tapioca pearls.
- Bring the vegetable milk (e.g. soy milk) to the boil.
- Cut into a vanilla pod and scrape the seeds inside. Flavor the vegetable milk with the seeds and the pod. Cook gently for 5 minutes to allow the milk to gain flavor.
- Remove the vanilla seeds and the pod with a sieve.
- Pour the whole cane sugar into the hot vegetable milk and mix to facilitate dissolving. Add a pinch of salt and flavor with a teaspoon of cinnamon powder.
- Then add the tapioca pearls and mix until they have assumed a swollen structure and become transparent.
- Pour the tapioca pudding into 4 bowls and allow to cool.
- Cut the papaya into small pieces and serve the tapioca pudding with the fresh fruit.
The alternative idea
It is possible to personalize the tapioca pudding with other fruit (eg strawberries, peaches, apricots) and you can use any type of vegetable milk: it is also special with coconut milk!Alice's comment - PersonalCooker
Try the warm tapioca pudding, perhaps with diced fruit (as I did) or with hot red fruit jam! Customize the tapioca pudding according to your tastes: try it with coffee, chocolate, orange, lemon, strawberry flavors.
