- 50 g of carrots
- 50 g of celeriac
- 50 g of cabbage
- 50 g of Greek yogurt
- Product without eggs: 30 g of light or yoghurt mayonnaise
- 1 teaspoon of mustard
- 1 pinch of salt
- 2 tablespoons of vinegar

Preparation
- Wash the carrots, remove the ends and obtain a julienne (with a specific vegetable row or with a grater).
- Clean the cabbage and obtain thin strips by placing the vegetables on a surface and cutting them finely with a knife.
- Clean the celeriac. Remove the hard rind with a knife and "scrape" the pulp with a line of vegetables until you get many thin strips.
The right idea
If you do not have a special vegetable row, you can make a vegetable julienne by grating carrots and celeriac.- Prepare the egg-free mayonnaise as indicated in THIS VIDEO.
How do you make egg-free mayonnaise?
In the glass of a blender, pour 50 ml of seed oil and 50 ml of soy milk (or cow's milk). Season with salt, add a drop of lemon and flavor to taste with a teaspoon of mustard paste. Blend intermittently with the immersion mixer until the desired creaminess is obtained. Store in the fridge at least one hour before use.- Combine the vegetables into strips in a bowl and season with a few tablespoons of apple cider vinegar and a pinch of salt.
- Season the vegetables with egg-free mayonnaise, Greek yogurt and a teaspoon of mustard paste. Mix thoroughly and let the light capricious salad harden in the fridge for an hour before serving.

The Light Capricciosa Salad (Without Eggs) is a low-calorie sauce, low in cholesterol and rich in good fats. The energy supply is essentially covered by lipids, proteins are insignificant and carbohydrates not very incisive; the fibers are not lacking.
