I finally found the perfect recipe for making apple pudding! The web is flooded with similar recipes (which are sure to be delicious, I don't doubt that), but what I was looking for was a pudding without eggs, without flour and without baking. I can't wait to offer you my recipe: follow me in the video and you won't be disappointed!

Ingrediants
- 450 g of apples
- 200 ml of soy milk or rice milk
- 1 piece of ginger root
- Untreated lemon juice and zest
- 1 piece of cinnamon stick
- 3 g of agar agar
Materials Needed

- Immersion mixer
- Cylinder or beaker
- Chopping board
- Knife
- Wooden spoon
- Bowls
Preparation
- Wash the apples, peel them and cut them into small pieces.
- Collect the diced apples in a saucepan, flavor with cinnamon, fresh grated ginger, lemon zest; add the sugar to taste and sprinkle with the juice of half a lemon.
- Cook and add about half of the rice drink. Cook the mixture over high heat for about ten minutes.

To prepare this recipe we used Morgan Apples, but the pudding is also perfect with Golden apples or with another type of soft apple.
Sugar is optional: if apples are very sweet, their use can also be avoided.
Cinnamon and ginger are two aromas that go very well with apples; those who wish can add a clove, vanilla and orange zest.
As an alternative to rice drink, soy drink can be used; those who do not have lactose intolerance problems or do not follow a vegan diet, can use cow's milk.- When the apples are soft, transfer them to a beaker (removing any cinnamon pieces) and purée them with the hand blender.
- Transfer the cooked apple soup to the same pot. Mix half a teaspoon of agar agar in the remaining rice milk, then add it to the apple puree and bring to a boil.
- When the mixture boils, transfer it to single portion cups and let it cool in the fridge for at least a couple of hours.
- Serve cold rice puddings, as a dessert, snack or enjoy for breakfast.
