- 130 g of wholemeal flour
- 40 g of brown sugar
- Half a teaspoon of baking powder
- 50 ml of water
- 25 g of sultanas
- 25 g of dried apricots
- 25 g of hazelnuts
- 25 g of almonds
- 25 g of pine nuts
- 1 tablespoon of extra virgin olive oil

Preparation
- First, soak the raisins in hot water to make them soft.
- Cut the dried apricots into very small pieces.
- In the blender glass, combine the remaining dried fruit (pine nuts, almonds and hazelnuts) and the brown sugar. Blend everything until you get a very fine powder.
The right idea
Those who do not like dried apricots can use dried figs or dried plums. Furthermore, it is possible to replace almonds, hazelnuts and pine nuts with other dried fruit of your choice (e.g. walnuts, peanuts, pistachios, etc.).- Pour the powdered nuts into a bowl. Add the wholemeal flour, the sifted yeast, the pieces of dried apricots and the raisins well drained from the soaking water. Mix everything by adding the water and a tablespoon of extra virgin olive oil.
- Mix all the ingredients until you get a paste that can be easily modeled with your hands.
- Arrange the dough obtained on a sheet of baking paper. Roll out the dough with a rolling pin to a thickness of half a centimeter. If necessary, you can facilitate the operation by adding a tablespoon of oil.
- From the dough sheet, obtain many small round biscuits with the special pastry cutter (a round mold with a diameter of 4 cm is recommended).
- Place the biscuits on 2 trays lined with greaseproof paper.
- Preheat the oven to 180 ° C.
- Sprinkle the surface of the biscuits with brown sugar.
- Bake the biscuits in the oven at 180 ° C for 13-15 minutes, until the surface takes on a slightly golden color.
- Immediately remove the biscuits from the oven and allow them to cool completely before consuming them.
