This year, for Mother's Day, I thought of some very fragrant cookies with cinnamon and orange! My mom loves these aromas in desserts, so I would like to make something personalized. Since mom is my lucky charm, I will prepare some shaped cookies. of four-leaf clover; then, considering that the safest refuge is a mother's heart, I will make some to heart!

Ingrediants
For about 40 cookies
- 1 pinch of salt
- 20 g of powdered sugar
- 100 g of sugar
- 60 g (1 medium) of eggs
- 1 teaspoon of baking powder
- 60 g of frumina
- 190 g of white flour type 00
- 1 teaspoon of cinnamon powder
- 90 g of butter
- Grated rind of untreated oranges
For decoration
- 1 tablespoon (about 30 g) of apricot jam
- About 100 g of sugar paste
Materials Needed
- Bowls of various sizes
- Wooden spoon
- Cut heart and four-leaf clover cookies
- Sieve
- Baking tray
- Baking paper
- Brush
- Rolling pin
- Lemon grater or row
- Precision scale
- Transparent film
Preparation
- In a bowl, mix the butter at room temperature with the granulated sugar, powdered sugar and eggs. Flavor the butter cream with grated zest of an orange and a pinch of cinnamon.
- Add the frumina (wheat starch), salt, yeast and, gradually, the sifted flour until the correct consistency is reached. The dough should be molded easily, but not stick to the hands.
- Wrap the dough in a sheet of cling film and let it rest for 30 minutes.
- Roll out the dough on a lightly floured surface or on a sheet of baking paper: you will have to obtain a 4-5 mm thick disc.
- In this way, obtain the biscuits using the appropriate molds (four-leaf clover and heart, in this case). Gradually place the biscuits on the baking plates, lined with greaseproof paper.
- The scraps can of course be kneaded again to make more cookies.
- Place the plates in a hot oven preheated to 180 ° C: bake for 12-15 minutes, until golden brown.
- Leave to cool completely.
- Prepare the green sugar paste as shown in THIS VIDEO.
- Roll out the green sugar paste with a rolling pin and obtain the same shapes as the biscuits (hearts and shamrocks).
- Melt the apricot jam (or another type of jam) in the microwave to thin it. Brush the surface of the biscuits with the jam and stick the sugar paste mold.
Did you know that
the jam acts as the perfect glue for the sugar paste. Alternatively, you can use food gelatin.- Serve the cookies.
