In fact I will show you how to prepare stuffed smiles, the homemade reinterpretation of the most famous Sofficini®, but in a much lighter way!

Ingrediants
For the pasta (8-10 smiles)
- 200 ml of milk
- 20 g of butter
- 120 g of white flour of type 00
- Q.b. of salt
For the stuffing
- About 50 g of Fontina cheese
- 50 g of chunks of tomato or tomato sauce
- 1 teaspoon of oregano
- Q.b. of salt
- Q.b. of pepper
- For cooking: 2 tablespoons of extra virgin olive oil
For the breading
- About 150 g of breadcrumbs
- Q.b. of salt
- 50 ml of milk
- 60 g (1 medium) of eggs

- Coppapasta with a diameter of 12 cm
Preparation
- In a saucepan pour the milk, butter and salt. Bring to the boil.
- Remove the saucepan from the heat and pour in the sifted flour all at once. Stir vigorously to avoid lumps: a compact ball will form. Move the saucepan over the heat again and stir until a noticeable film forms on the bottom of the saucepan (this takes a few minutes).

Adding the flour to the mixture of boiling water and butter will begin the gelatinization process of the starches.
To prepare the pasta dei sorrisi you follow the same procedure as the pasta for profiteroles: the only difference is that, in this recipe, there are no eggs in the pasta. to drastically reduce the amount of butter (only 20 g)!- At this point, pour the mixture into a bowl and let it cool at room temperature for 10 minutes (to speed up the process, you can let the mixture rest in the refrigerator).
- Shape the dough with your hands and spread it between two sheets of baking paper, using a rolling pin: you will have to obtain a very thin sheet, a few millimeters thick.
- With a round cookie cutter with a diameter of 12 cm, cut out many discs of dough. The scraps can be easily kneaded and made new discs.
- Prepare the filling: blend the Fontina cheese and cut the peeled tomatoes into small pieces. Season the tomato with salt and pepper, then flavor with a teaspoon of oregano. Alternatively, use the ready-made tomato chunks.

In this recipe we have recommended a filling based on tomato and spun curd cheese. In any case, it is possible to change the filling and use mozzarella (drained from the liquid), ham, mushrooms, aurora sauce or simple bechamel.- Fill the discs of dough with a teaspoon of tomato and a teaspoon of smoothie cheese, taking care to arrange the filling in the center. Close each disc in half, to form half-moons (smiles). Seal the edges of each crescent by exerting light pressure with the tines of a fork.
- Prepare the breading. In a bowl, beat an egg with the milk and salt. Dip each smile in the egg, then pass it in the breadcrumbs. Repeat the operation twice.
- At this point, proceed with cooking.

Smiles are often fried but, for a lighter version, we suggest baking.- Arrange the stuffed smiles on a baking sheet lined with the special paper. Pour a drop of oil on the surface and cook at 180 ° C for 15 minutes.

Smiles al Forno are a domestic variant of the commercial product called Sofficini.
