My friends Chiara and Andrea brought me a basket full of fresh green beans, just picked! I couldn't help but offer you a delicious recipe with these close relatives of beans. So I thought of a savory green bean pie, which we are going to enrich with potatoes and Genoese pesto.

Ingrediants
For the light "brise" pasta
- 1 pinch of salt
- 20 ml of water
- 4 tablespoons of corn oil
- 75 g of low-fat yogurt
- 200 g of white flour of type 00
For the filling
- 2 tablespoons of corn oil
- q.s. of salt
- 20 g of flax seeds
- 100 g of stretched curd cheese or mozzarella
- 80 g of Genoese pesto
- 300 g of potatoes
- 300 g of green beans
Materials Needed

- Knife

- Peel vegetables
Preparation
- Peel the potatoes and cut them into cubes. Boil the diced potatoes in lightly salted water for 10 minutes.
- Clean the green beans: remove the stalk and the opposite end with your hands or a knife. Wash the green beans and boil them in lightly salted water for 10-15 minutes, until soft.
- Prepare the Genoese pesto as described in this recipe.
- Prepare the light shortcrust pastry. In a bowl, sift the white flour and add the salt. Mix the flour with yogurt, oil and water, until you get an elastic and easily moldable compound.
- Leave to rest for half an hour.
- Meanwhile, prepare the filling. Cut the green beans into 2-3 cm pieces. In a bowl, combine the green beans, the potatoes, the Genoese pesto, the spun curd cheese cubes (eg Mozzarella, Asiago, Fontina) and the flax seeds. Season with salt if necessary.
- Roll out the light shortcrust pastry with a rolling pin and obtain an oval. Make cuts along the edges of the oval, leaving the central part intact. Distribute the filling in the center of the oval and close by folding the cut sides inwards (we recommend that you refer to the video).
The alternative idea
In this version, we offer a closed savory pie, as if it were a savory strudel. An excellent savory pie can be obtained by leaving it open or by folding the dough into a crescent, as if it were a calzone.- Prick the surface of the savory pie with the tines of a fork and brush with 2 tablespoons of extra virgin olive oil.
- Bake the quiche at 180 ° C for 25-30 minutes, until the surface appears shiny and golden.
- Remove from the oven, allow to cool and serve.
