Ingrediants

- About 30 ml of soy milk
- 6 g of baking powder

- 1 tablespoon of corn oil
- 50 g of chickpea flour

Preparation
- In a blender, finely chop the flax seeds. Gather the flaxseed powder in a bowl and pour in the water. Let the mixture rest so that the mucilages present form a gelatinous and dense paste.
- Meanwhile, blend the brown sugar with the lemon zest.
- In a bowl, first combine the dry ingredients: chopped and flavored cane sugar, wholemeal flour, chickpea flour, salt and sifted yeast. Mix the ingredients and mix with a tablespoon of corn oil, soy milk and flaxseed paste.

Flax seeds are very rich in mucilage: in contact with water, they form a dense and gelatinous mass that can be used as a valid alternative to eggs!- Mix the ingredients to obtain a dough similar to vegan shortcrust pastry. Cover with cling film and leave to rest for at least half an hour.
- Take the dough, cut it into 3 parts and roll it out finely with the help of the pasta cutter, taking care to always flour everything to prevent the dough from sticking to the machine.
The right advice
For a machine with 9 sizes, it is advisable to roll out the dough to N ° 6, until obtaining an almost transparent sheet.- With the zigzag wheel, make some fairly regular rectangles, approximately 5 x 8 cm in size. With the same wheel, engrave each rectangle on the surface.
- Pour the peanut oil into a pan and, with the food thermometer, measure the temperature until it reaches 160-180 ° C.
- Very quickly fry the rectangles of pasta in oil at 180 ° C: just a few seconds are enough.
Attention
The chatter must remain in the oil for a very short time to avoid burning them! 20-30 seconds are in fact enough: as soon as it is removed from the oil, the chatter will be soft. Once cold, they will instead take on a very crunchy texture.- Drain the chiacchiere and place them on absorbent paper. Serve with finely chopped brown sugar.
