Gum arabic is presented as a very fine powder containing some minerals, but still devoid of nutritional value. Gum arabic is the oldest of the known natural gums and can be used not only as a food additive, but also in other contexts, for example as a binder in cosmetics, as an adhesive in painting and as an agent in the mummification process. In the food industry, acacia gum is used as a thickener, stabilizer and support for other additives; it is currently considered to be safe from a toxicological point of view. It is therefore used in various foods and / or preparations, such as glazes for desserts, puddings, sorbets, ice creams, candies, chewing gum, etc.
However, it is essential to underline that the consumption of excessive quantities of this additive could cause allergic reactions (in subjects with hyperactivity), flatulence and bloating (due to fermentation by the intestinal bacterial microflora).
