- E401 SODIUM ALGINATE
Sodium alginate is the sodium salt of alginic acid (see E400), a natural polysaccharide. It too has a predominantly thickening and emulsifying function.
Sodium alginate, as well as other salts, can be contained in various food products: desserts, barbecue sauces, ice cream creams, mixes for ricotta cakes, puddings, pre-treated sliced cheese, etc.
At the moment. at the concentrations normally used, there are no known negative side effects caused by sodium alginate, while, at high doses, there could be a decrease in intestinal absorption of iron and other minerals.

- E402 POTASSIUM ALGINATE (same) → used mainly, in addition to the foods mentioned above, in products with a low sodium content
- E403 AMMONIUM ALGINATE (same) → used above all, as well as in the foods mentioned above, in soft drinks, food coloring, icings, etc.
- E404 CALCIUM ALGINATE (same) → used mainly, as well as in the foods mentioned above, in ice cream and frozen bakery products.
