E353 METATARTARIC ACID
Metatartaric acid is an acid contained in sugar cane and produced from glucose.
This compound is an acidifier, stabilizer, acidity regulator and preservative; it is produced both naturally (it can be obtained from grapes, in particular from the stalk) and synthetically. Metatartaric acid can be contained in wine, fruit juices, biscuits, etc.
As it is considered a harmless compound, there are no known negative side effects.
ADI DOSE: 30 mg per kg of body weight.
