E339 SODIUM PHOSPHATE
Sodium phosphate is the sodium salt of phosphoric acid; it is an acidity regulator and a chelating agent (used to bind metal ions). This product prevents desiccation and is used in powders as a stabilizer of acidity, as well as preventing the formation lumps that can originate in the various products. Furthermore, sodium phosphate has the ability to enhance the action of antioxidants.
To ward off a calcium deficiency, its use is limited (even if the ADI dose is high) as it avidly binds calcium.
ADI DOSE: 70 mg per kg of body weight.
It is divided into various sodium salts of phosphoric acid:
- E339a SODIUM SINGLE-ORTHOPHOSTATE
Mono ortho-sodium phosphate is an antioxidant compound produced synthetically from phosphoric acid. It can often be contained in boiled meat, in mixes for cakes (in particular those based on ricotta), ham, frankfurters, filling for lemon cakes.
At the moment it does not appear to be responsible for any negative side effects.
ADI DOSE: 70 mg per kg of body weight.
- E339b SODIUM DI-ORTHOPHOSPHATE
Sodium di-orthophosphate is a compound with antioxidant function produced synthetically starting from phosphoric acid. It can be added to foods containing butter and / or margarine and to boiled meats.
For the moment it does not appear to have any negative side effects.
ADI DOSE: 70 mg per kg of body weight.
- E339c SODIUM TRI-ORTHOPHOSPHATE
Sodium tri-orthophosphate is a compound with antioxidant function produced synthetically starting from phosphoric acid. It can be added to sliced cheeses, boiled meat, melted cheese, quick-prepared desserts, ham, frankfurters.
For the moment it does not appear to have any negative side effects.
ADI DOSE: 70 mg per kg of body weight.
