E252 - POTASSIUM NITRATE
Potassium nitrate is a chemical preservative, which comes as a white powder, used to maintain the hue of colors in food.
It is mainly contained in cheese, meat and meat products, pizza etc.
Nitrates do not have great side effects per se, but being able to be transformed into nitrites, through heating or through other processes, they can cause hyperactivity, asthma, insomnia, nausea, dizziness, lowering of blood pressure.
Frequent consumption above the ADI dose is not recommended.
ADI DOSE: 3.7-5.0 mg per kg of body weight.
